Lamb and Date Tagine

Here is on eof my favourite recipes discovered over the New Year Holiday.

4 tblsp olive oil
2 onions peeled and chopped
I tsp ground cinnamon; ground turmeric, ground ginger, ground cumin, ground all-spice
1k diced leg of lamb
250gr soft dried pitted dates
250ml pomegranate juice
2tsps salt
250ml water.
Warm oil
Gently cook onions until soft
Add spices and cook
Add lamb and cook
Add dates, pomegranate juice, water and salt.
Bring to the bubble
Cook in oven for 2 hours+ at 150°C or Gas 2
Add coriander as a garnish

This dish is lovely with the following relish:

Chop one red onion, marinade in 60ml of lime juice and 60ml pomegranate juice for half an hour, drain add 40gr pomegranate seeds, toss with coriander and salt to taste.
